Blogger Recipe – Oatmeal Creme Pies

I decided to test out this awesome recipe for Oatmeal Creme Pies….They rocked. I modified the recipe a bit:

vegan oatmeal cream pies
1 cup earth balance
3/4 cup dark brown sugar
1/2 cup sugar
1 tablespoon molasses
1 teaspoon vanilla
2 egg replacers (i used ener-g brand)
2 scant cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon cinnamon
2 cups quick oats

Cream together the Earth Balance, both sugars, molasses, vanilla, and ener-g egg replacer. Add the remaining ingredients to the mix. Scoop out cookies onto cookie tray (1 tbsp, each), and flatten (they don’t spread so make sure you flatten them out enough).Bake at 350 degrees, for 10-12 minutes. Allow to cool on cookie sheet for about 5 minutes, and then move to a rack to cool completely.

I used the Vanilla Butter creme frosting recipe from Vegan Cupcakes Take Over the World to sandwich them together. I got about 21 sandwiches out of this recipe. Took them to my race over the weekend and they went like hotcakes. Some people were calling them crack and asking for more. I’m hoping to make a large batch for the next race.
