Vegan MoFo 2010 – Day 2

As I mentioned yesterday I eat two breakfast. Start out with a smoothie and then I arrive to work and munch on some combination of cereal, fruit, nuts (and coffee, of course!). I make a small pot of coffee (4c, all that fits in my snazzy Alterra thermos) and take it too work with me. BY the time I get there, it’s still piping hot (No joke – 2 hrs later and its hot!). Today my breakfast was Kamut Puffs (These rock) with Almonds and Dried Figs. Awesome.

I love almonds so I almost always have almonds – otherwise it’s cashews – always raw, never roasted/salted. The fruit rotates depending on my mood – yesterday was dried currants, last week was dried apple, before was banana chips. Hmm, almost always it’s dried fruit.
