FFV – Berries & Spice Muffins

Whole Foods had some beautiful Blackberries so I bought them and made Berries and Spice Muffins from Fat Free Vegan. Wow, did they rock too. I’ve fed them to everyone I can think of and they all enjoyed them.

Party Food

I love blogs that give recipes as much as the next person (even though I don’t make a ton of original stuff right now…sorry, I’ll get better and post some more of my own baking creations!) But, for my house warming party, I took a few mouth watering recipes from fellow bloggers…

Tempeh Wingz from Don’t Eat Off The Sidewalk. These were a huge success…even the omnivores liked them!

Pumpkin Whoopie Pies from Vegan Etsy, while the filling was out of my Joy Of Vegan Baking cookbook.

Chocolate Chip Cookie Dough Brownies from Vegan Gal.


Strawberry Cupcakes from JoVB, but I topped mine with Chocolate Ganche.

Rugelach from JoVB as well…I got tons of compliments on these, they seemed to be a real crowd pleaser. I used apricot jam on mine.

I even made my own ranch dressing for the veggie tray!

For the ranch dressing I used 1/3 cup silken tofu, 1/2 cup vegan sour cream, 1/3 cup rice milk, and then added about a tsp or so of Dill, Garlic Powder, Basil, Salt, and Fresh Pepper.

A fruit tray of course, I kept eating the pineapple while I was cutting it, it was so yummy.
And then of course, my friends made a few things too. Although I didn’t get a picture of what people brought. We sort of got carried away with the party and took no pictures once people arrived. Thanks to my friends from bringing Hummus and Pita Chips, Vegan Chili, Homemade Guacamole and Chips, and of course, lots and lots of beer and wine. If I forgot to thank anyone for something they brought, I’m sorry and thank you! The party rocked.

FFV – Impossible Pumpkin Pie

The Impossible Pumpkin Pie from Fat Free Vegan. It just looked too good to pass up since I love pumpkin! It turned out incredible.

FFV – Apple Cinnamon Swirl Pancakes

I  made FFV Apple Cinnamon Swirl Pancakes for my prerace breakfast…man, we’re they tasty! I just ate them plain, but I bet they’d rock with some real maple syrup or maybe even whipped cream…did I mention I got a whipped cream charger? I need to make some whipped cream now. I’ll work on that next week.

FFV – Mexican Lasagna

I love Mexican food, that and Indian food are my two favorites. So I made FatFreeVegans Mexican Lasagna. It totally rocked. Recipe is available here. I like to make food that has several servings because it’s quick to reheat for lunches and after hard bike rides when I don’t feel like cooking. This dish was great. I also opted to use the Green Chile Enchilada sauce verses the normal red, it turned out pretty good too. To anyone who loves Mexican food, this dish is quick, easy, and tasty…may favorite attributes of a meal!

FFV – Skinny Figgy Bars

I made Fat Free Vegan’s Skinny Figgy Bars. I love Fig Newmans (the wheat and dairy free version are vegan) and I thought I could totally make my own and they’d be just as yummy, so I found this recipe and decided to try it. I like how the dough is all oats and not a flour dough, it adds a nice texture to it. I did test them out on a friend of mine and he seemed to really like (thanks for taste tasting my food Christopher).

FFV – Bannan Coffee Cake

Then I made Fat Free Vegans Banana Coffee Cake to share with my teammates at our race this weekend. I sure hope they like it.
