For my birthday my sister got me two awesome cookbooks…Vegan Planet (VP) and the Joy of Vegan Baking (JoVB). To break in on book I made the Simmered Beans and Tomatoes for dinner the other night. Not the best picture, but my camera works some days and doesn’t work others. I served this up over some brown rice. Leftovers tasted great too…I added some spinach to it for my lunch and that rocked too.
